French Toast Bacon Cupcakes

Baking with bacon always brings surprising results to your table which not only looks good but taste great too! So why not give a try to the mouth watering French Toast Bacon Cupcakes.

Ingredients:

1 1/2 cups of all-purpose flour

1 1/2 tsp of baking powder

1/2 tsp of ground cinnamon

1/4 tsp salt

1 cup sugar

1/2 cup unsalted butter, melted and then cooled

2 eggs

1 tsp maple extract

1/2 cup milk

10-12 slices bacon

Instructions:

Begin by preheating your oven to 350 degrees and at the same time line your baking pan with paper liners.

The next step is to bake or fry batches of bacon until crispy or brown. Use your preferred method yet towards the end it is a good idea to soak extra oil using paper towels and leave aside to cool.

Once the bacon is cool enough to work with, cut some inch-long slices of bacon. These will be used to decorate the cupcakes in the very end. So make accordingly. Prepare more strips if trying this recipe for the first time. Next, chop the remaining bacon in small pieces and leave it aside.

Now come back to your cupcake preparation. In a bowl, you need to mix flour, cinnamon, baking power and salt. Mix well.

Then take a large bowl and whisk eggs, butter and sugar till smooth.  Then whisk in maple syrup in the mixture. Also gently whisk in milk and the flour mixture and beat until smooth. The proportion should be two additions of milk to three of the flour mix.  Then add or fold the small bacon strips, mix the batter until distributed well.

The final step is to scoop the batter in the pan and bake for around 20 to 25 minutes or until golden brown. To identify if the cupcakes are ready touch the top lightly, notice that the top springs back. Leave the cupcakes to cool in the pan for ten minutes, then you remove from the pan and let them cool off completely.

For your cupcakes frosting, beat butter, salt, maple syrup and maple extract well. Add half cup of sugar at a time then beat until fluffy for around 5 minutes. Frost your cupcakes and decorate with your prepared crispy bacon strips.
