The bulk of the population living in Ireland follows the Christian faith hence Christmas is the most important religious holiday of the year. The Irish have their own traditions when it comes to celebrating this holiday and part of this tradition has to do with preparing special food for the day.

Some of the most popularly prepared dishes around Christmas time in Ireland are as follows:

Roast Goose with Potato Stuffing

This is a rather unusual tradition that has been maintained by the people of Ireland. In order to prepare this traditional recipe you will require around ten to twelve pounds of goose, potato stuffing, apple sauce, salt and pepper.

You will start off by cleaning the goose to remove all the large pieces of fat. After cleaning the goose give it a nice coating of salt and pepper. Following this you will fill the goose with the home made potato stuffing which you will prepare before hand.

Next up you will place it in a rack in a roasting pan but make sure you keep it uncovered. You have to roast it till the skin starts to turn slightly brown which should take around fifteen minutes. After this you should reduce the heat of the oven and let it roast for another 20 minutes. It is quite likely for the excess fat to surface once the goose is roasted hence you will have to peel that off. Once the goose is nicely browned consider it to be done and serve it with hot apple sauce to enjoy a taste of Irish tradition.

Irish Christmas Plum Pudding

If you want to get this exquisite recipe right you need to first understand it completely. This pudding will take up quite some time to prepare but generally keeps very well and has a great flavor.

In order to make this pudding you will require currants, raisins, citron, cherries, flour, sugar, chopped suet, salt, nutmeg, allspice, ginger, almonds, apple, lemon rind, lemon juice, Guinness, eggs and butter.

You will start off by mixing the first four items on the list in a large bowl and set it aside. Then you will combine the flour with the breadcrumbs, sugar, salt, suet and spices in another bowl. To this you will add grated apples, almonds and the fruit you had first set aside. Add the lemon and lemon zest in the mixture at this stage as well.

On the side beat to eggs in a bowl and bring to froth. Add the Guinness and mix well. Next slowly start adding this mixture to the other bowl with the flour mixture.

Now grease a bowl with butter and pour the mixture in them. Use foil to cover the bowl along with which you have to tie a piece of muslin using a butcher’s string. Now you will place the pudding bowl in a larger pan with hot water over a stove. You will have to keep it on the stove for the next five hours or so. Your plum pudding will then be ready to serve as you take it out and remove the foil.
