The Irish possess quite a sweet tooth. There are tons of dessert recipes in the Irish cuisine that date back to centuries ago. Some of the dessert recipes that exist today belong to ancient Celtic Ireland. Fruit, berries and honey were amongst the most commonly used items in Irish desserts such as pies, breads and puddings.

With time Irish dessert recipes have evolved and today they are considered to be amongst the most exotic dessert recipes in the world. Irish desserts are particularly renowned for their richness and heavy use of cream. The Irish cake, glazed tea cake, potato pie and the Irish Apple pie are amongst the most well renowned items for the desserts collection.

Potato Pie Dessert

You will need some boiled potatoes, melted butter, granulated sugar, almond powder, orange extract and eggs for this recipe. Start off by greasing a pie plate and then preheat your oven to 375F. Nicely mash the potatoes making sure no lumps remain. Next beat the egg whites to make them stiff. On the other hand beat the yolks till they become lemon colored. Next add the almond powder, sugar, orange extract and the egg yolk to the potatoes and mix all the ingredients well together. Lastly fill in the egg whites. Now pour the pie mixture in the pie plate and place in the oven to bake for about 45 minutes.

Glazed Irish Tea Cake

For this Irish specialty you will need some butter, sugar, pure vanilla extract, eggs, cream cheese, cake flour, baking powder, raisins, and buttermilk. For the glaze you will need fresh lemon juice and sugar.

Preheat the oven to 325F. Grease a loaf pan generously and lightly dust it with flour. Fit a piece of waxed paper on the bottom of the pan. For the cake you will start off by mixing the butter, vanilla and sugar until the mixture becomes fluffy. Now you will beat in the eggs one by one and then you will add the cream cheese. Mix all the ingredients well.

On the side sift flour and baking powder together while adding some salt. Put the raisins in a bowl and add some of the flour mixture to the bowl while mixing it together to give the raisins a nice coating. Now add the remaining flour and buttermilk to the bowl and make into a smooth paste. Stir the currants into the cake as well. Now you will pour the batter in the pan and place it in the oven to bake until well browned.

On the side you will prepare the glaze by mixing the sugar and lemon juice together to form a smooth paste. Once the cake is ready you will spread the glaze over its surface and your cake will be ready to serve. This cake can be stored for a long period of time. If sealed in an air tight bag or box you can freeze it for up to three months and still have it tasting as good as the freshly baked one.
