Spanish Lamb Chops in Tomato Sauce

To prepare this deliciously simple recipe you will need 3/4 kg of clean lamb chops, five tbsp. of extra virgin olive oil along with 1 onion and 3 cloves of garlic.
For the tomato sauce you will need six medium tomatoes which have been peeled and chopped. The seasoning is fairly simple and all you need is a sprinkle of salt to finish the recipe off.

Directions for Cooking Spanish Lamb Chops

Start by heating the olive oil in a frying pan and put the lamb chops inside the hot oil. Cook them on both sides until they are golden brown and no longer raw. Remove them by placing them in a casserole dish.

Now fry the onion in the same frying pan with the remaining oil and then add crushed garlic cloves. Fry for a few minutes to allow the flavors to release and vegetables to become soft. Now pour in the tomatoes and season with salt.

Cook for five minutes till the tomatoes are no longer raw and then pour the hot tomato sauce into the lamb chop mixture inside the casserole dish.

Cover it and place it in a pre-heated oven at one 180° C and bake the Spanish lamb chops for 30 minutes or until meat is tender. Serve warm with a mixture of olive oil and balsamic vinegar and fresh warm bread.

Grilled Baby Spanish Lamb Chops with Herbs

Baby Spanish lamb chops can be prepared for grilling on a barbecue or an indoor grill during the winter. Spanish lamb chops are the size of large lollipops but those available in other countries may be larger so take that into consideration when you’re preparing the meat.

Ingredients for Grilled Baby Spanish Lamb Chops with Herbs

For a very spectacular recipe from the renowned chef Mario Batali you will require the following ingredients: 12 pieces of 4 oz baby rib Spanish lamb chops, 2 tablespoons of olive oil, 2 tablespoons of vinegar and 1 tablespoon of sugar.

The herbs required for this grilled baby Spanish lamb chops recipe are 2 teaspoons of chopped lavender buds from dried flowers and 2 teaspoons of fresh rosemary which has been minced finely. Season it with freshly ground black pepper and coarse sea salt.

Directions for Cooking the Grilled Baby Spanish Lamb Chops with Herbs

Marinate the Spanish lamb chops by rubbing them all over with extra virgin olive oil and then drizzle the vinegar on top. In a separate bowl mix the sugar as well as the herbs which include rosemary and lavender along with a little salt and pepper.

Rub this mixture into the meat and set it aside for 20 minutes or overnight. When you want to eat the barbecue chops either the same day or the next one start by heating your barbecue grill or the indoor grill to the right temperature.

Now place the Spanish lamb chops on top of the grill over very high heat and turn them occasionally. You will need to cook them for about eight minutes for medium rare meat and 10 to 12 minutes for well-done Spanish lamb chops. You can season them with a little more salt and freshly ground that pepper if required at serving time.
