Lidia’s appetizers -Montasio Cheese Crisps

Using this recipe you will be able to make 4 crisps. You will need half a pound of Montasio cheese with the rind removed. You need to coarsely shred the cheese to form about 2 1/2 cups in total. Start by preheating your oven to 250°F. Take a 5 inch nonstick skillet and place it over medium heat with the cheese inside it until it begins to sizzle. Scatter about one fourth of the all the cheese in an even layer on the bottom surface of the skillet. Let it cook undisturbed until you see fat bubbles forming around the edges. Cook for about 7 to 8 minutes after which you need to invert the cheese crisps to brown the other side. After that, place them onto a baking sheet and put them into the oven with the remaining fricos (what we’ve been calling crisps until now).

Lidia’s First Course-Herb Pesto

For this recipe you will need 1 cup packed fresh Italian parsley and a half cup packed fresh sage, marjoram leaves and thyme, half cup fresh basil leaves, four peeled garlic cloves, 1 cup extra virgin olive oil and salt according to taste. In order to prepare the herb Pesto you’ll first need to wash the leaves using cool water and then dry them thoroughly. It is a good idea to use a salad spinner for this process. Next you simply need to combine all the herbs together along with the garlic in a blender and blend the contents together at slow speed. While doing so you should continuously add the oil slowly into the mixture. The final pesto should be smooth to which you need to add the salt according to taste. It is important to keep this herb pesto in a sealed jar. It can last up to four months in the refrigerator if you do so.

Lidia’s main course Griddle Crisp Grilled Chicken

In order to prepare this recipe at it’s best to make sure that you use a hot cooking surface and a weight that keeps the chicken in close contact with it. The list of ingredients includes six spring chickens, coarse salt, 3/4 cup extra virgin olive oil, freshly ground black pepper, garlic cloves and six sprigs of fresh rosemary.

Start by cutting along both sides of the chicken’s backbone using poultry shears. You need to make incisions along both sides of the chicken using a sharp knife. After preparing the chicken to be cooked you need to start by seasoning it with salt and pepper. Next combine the oil with garlic and rosemary leaves in a bowl and turn your chickens in this marinate. After letting the chicken soak up the marinade overnight you need to place the chicken into a heated griddle. Cook for about 10 minutes undisturbed. Turn over and repeat the process until you find the chickens to have deep golden brown color overall.
