Stuffed Turkey Breast Recipes with Balsamic Shallot Sauce
Start by preparing the balsamic shallot sauce by sautéing half a cup of minced shallots in a tablespoon of butter on medium flame for just three minutes. Pour in 1 cup of turkey broth and 1/4 cup of balsamic vinegar. Bring it to a boil and reduce it until the sauce thickens which should take approximately 10 minutes.
Next prepare the filling for the turkey breast by sautéing 1/4 cup of chopped fresh sage leaves with 1/4 cup coarsely chopped walnuts and 3 cloves of minced garlic in a tablespoon of butter.
Slice the turkey breast tenderloins in half lengthwise and place between two sheets of waxed paper and pound with a hammer to make it flat and even in thickness. Layer each of the turkey breasts with a slice of Gruyere cheese and sprinkle the mixture of walnuts and sage on top of each turkey breast slice.
Fold the turkey breast in half so that it closes like a sandwich. Sprinkle salt and pepper on top of each piece of meat and then dip it in some flour to coat the meat.
Next cook the stuffed turkey breast on a skillet in hot oil on a medium flame. Cook for five minutes on each side and remove it into a serving plate. You can deglaze the pan by adding the sauce prepared previously into it and then cook it till it bubbles. Pour the sauce on the stuffed turkey breast and serve immediately.
Oven Baked Stuffed Turkey Breast Recipe
For a delicious deli style stuffed turkey you can start by pre-heating your oven to 450°F. You will require a foil bag for using it to hold the turkey breasts while they cook in the oven. Spray the inside with cooking spray and dust the interior with flour.
You will need 7 pounds of sliced turkey breast pieces which you will have to flatten with a hammer. Season them with salt and pepper to taste and stuff the inside with 1 1/2 teaspoons each of dried rosemary, dried thyme and dried tarragon leaves.
Rub the mixture on top also to season the meat on both sides. Stuff the inside with little pieces of cheese and fold the meat over to seal it. Line the oven foil bag with these turkey breast pieces. Seal the open end of the foil bag and put it in a pan which has a depth of 1 inch or more.
Place it in the oven and bake for 1 1/2 hours. Remove from the oven using oven mitts and, using a very sharp knife, slice the bag open lengthwise to let the steam escape. You should wait for 15 minutes before you can remove the pieces of stuffed turkey breast and serve them.
