Basic Turkey Croquette Recipe

In a medium-sized glass bowl add 2 1/2 cups of ground turkey mince which is already cooked. Add 2 tablespoons of melted butter, 1 tablespoon of finely minced onion along with 2 tablespoons of finely chopped parsley, 1/8 teaspoon of sage and blend well. Season the croquettes with salt.

Place them in the fridge to chill for a few hours. These croquettes must be prepared immediately before serving. The refrigeration process allows the ingredients to gel together and prevents the croquettes from crumbling when they are fried.

Remove from the fridge approximately 30 minutes before you want to serve them and shape them into nine cylindrical pieces.

To prepare the coating used a shallow dish and beat one large egg with 1 tablespoon of cold water. In a separate flat dish place 1/4 cup of flour and in another dish place half a cup of dried bread crumbs. Using your right hand, put the croquette first in flour, then in the beaten egg with your left hand and transfer it with your left hand to coat it with the breadcrumbs.

Using a large skillet, heat good-quality vegetable oil on medium flame and then add in the croquettes. Fry until they are golden brown and turn only once. Drain on kitchen paper towels and serve immediately with Tabasco sauce.

Gourmet Turkey Croquettes -Rich and Creamy White Sauce

Prepare a rich and creamy sauce for the turkey croquettes by melting 4 tablespoons of butter on a low flame and adding 1/3 cup of flour and a teaspoon of salt to season it. Stir continuously till it is fragrant and then add in 1 cup of milk very gently into the mixture while stirring continuously.

Keep cooking until the mixture becomes very thick and the milk is absorbed completely. Season with 1/4 teaspoon of paprika. Cool and store in the refrigerator as a creamy sauce which can be used with different fried items and lasts in the fridge for a few days.

Gourmet Turkey Croquettes Preparation

For a turkey croquettes mixture, combine 2 cups of cooked turkey pieces with 1/4 teaspoon of salt and half a teaspoon of paprika. Add in 1/4 teaspoon of chopped celery stalk and 1 teaspoon of lemon juice along with 1 teaspoon of minced parsley. Mix in one cup of white cream sauce which you have prepared previously. Shape this mixture into six croquettes and refrigerate till cool.

Baking the Gourmet Turkey Croquettes

Heat the oven to 375°F and place a shallow baking dish which has been greased with 1/4 cup of butter inside the oven. When the butter is hot and has melted completely, dip the croquettes into one beaten egg and coat them with one cup of fine breadcrumbs before placing them in the pan.

Roll the pan from side to side in order to coat the croquettes with butter completely. Bake the turkey croquettes until golden brown and crisp which should take approximately 30 minutes. Serve these gourmet turkey croquettes with cream cheese sauce.

Cream Cheese Sauce

To prepare cream cheese sauce, combine 2 cups of cream sauce with half a cup of cooked celery and 1/4 cup of finely chopped pimento. Combine it with 2 teaspoons of finely minced parsley and refrigerate for 15 minutes. Before serving sprinkle a little Parmesan cheese on top.
