Afghan Butter Cookies Kulche Birinjee
1/3 cup pitted dates, finely chopped
½ cup boiling water to cover dates
1 cup all purpose flour
¼ cup unsweetened cocoa powder
1 teaspoon baking powder
¾ cup vegetable shortening
¼ cup granulated sugar
1 teaspoon vanilla extract
2 cups corn flakes
Directions:
Prep Time: 15 minutes
Total Time: 20 minutes
Yield: 3 dozen cookies
Preheat the oven to 350 degrees F.
Place the chopped dates in a small cup and cover with the boiling water for 10 to 15 minutes.
Drain and discard the liquid.
Combine the flour, cocoa, and baking powder.
In a large bowl, cream the vegetable shortening and sugar until light and fluffy.
Stir in the dates.
Beat in the vanilla extract.
Gradually blend in the dry ingredients
Fold in the cornflakes.
Break off walnut size pieces of the dough and roll into balls.
Place 1 1/2 inches apart on ungreased baking sheets.
Bake for 12 to 15 minutes, or until firm to the touch.
Transfer to wire racks to cool.
Khatai Cookies
1-1/2 cups white flour
1 cup sugar
3/4 cup corn oil
1 tbs crushed cardamom
Finely ground pistachios
Preheat oven to 350 degrees. In a large bowl, mix together the dry ingredients except for the pistachios. Add in the oil and mix well until you have a smooth, soft dough.Shape the dough into 2-inch round balls. Place on cookie sheet lined with parchment approximately 2 inches apart. Bake for 15 minutes or until lightly browned. Remove from oven and immediately sprinkle the tops of the cookies with the pistachios. Cool and serve.
Both of these recipes are easy to fix opposed to many Afghan recipes that you find will require many ingredients. They are tasty, nutritious and they will fill the urge to snack quite easily.
