Deep Fried Turkey with Cinnamon and Spice

Mix 1/2 cup of cinnamon and 1/2 cup of powdered red chili with 1/2 cup of brown sugar and 1/2 cup of kosher salt. Combine these ingredients thoroughly, which will be used as a turkey rub. Preheat 3 gallons of cooking oil at 400°F in your Masterbuilt electric turkey fryer.
Prepare the 12 pound fresh turkey by removing the neck and the giblet from inside. Remove any leg binder or pop-up timers which may be present on the turkey. Rinse it well with icy cold water and drain the cavity completely. Then dry the bird thoroughly with paper towels.
