Slice 1/4 cup of scallions and sauté them along with half a cup of chopped celery and three Granny Smith apples which have been peeled and diced in 1/8 cup of vegetable oil till they become tender but are still crisp. Let this mixture cool while you prepare the seasonings for the ground turkey.

Using 4 cups of cubed mango combine 1 cup of dark brown sugar, 1 cup of apple cider vinegar, 1 cup of coarsely chopped yellow onions, 3/4 cups of golden raisins, half a cup of sliced lime, half a cup of grated gingerroot, half a cup of peeled as well as deseeded oranges, half a cup of molasses, 1/4 cup of sliced lemon, three cloves of minced garlic and one tablespoon of fresh mustard seeds and mix well.

Once you have filled the jars and removed any air you will have to process it further for 10 minutes in the canner. Before you open the seal you’ll have to let the chutney cool and rest for 24 hours.
