You can prepare tofu turkey at home for a vegetarian alternative to eating meat. It can be seasoned with different spices and herbs for a succulent and satisfying meal.
Herb Filled Turkey Tofu
Use a large round colander and cover it with cheesecloth. Crumble 16 ounces of firm tofu and place it on the cheesecloth and cover that with another piece of cloth on top. Put this on top of a bowl to collect the liquid which drains out and place a heavy weight on the tofu to weigh it down. Put this in the refrigerator for 2 to 3 hours.
Stuffing for Tofu Turkey
Prepare the stuffing by sautéing 1 red onion which has been finely diced along with 1 1/3 cups of diced celery and 1 cup of chopped mushrooms in 2 tablespoons of sesame oil.
Next put in 2 cloves of minced garlic and flavor with 1 1/2 teaspoon of dried rosemary, 1/8 cup of dried sage and 2 teaspoons of dried thyme. Season it with salt and pepper to taste.
Pour in 1/4 cup tamari and cook for five minutes. You can get prepared herb stuffing from the market. Add 3 cups of the herb stuffing into the mixture. Give it a stir and remove it from the flame.
Preheat your conventional oven up to 400 degrees F. Prepare a baking sheet by smearing it with a little sesame oil to coat it perfectly.
Flavorful Sauce for the Tofu Turkey
Mix half a cup of sesame oil with 1/4 of cup tamari and 2 tablespoons of miso. Spoon 5 tablespoons of unsweetened orange juice and 1 teaspoon of honey mustard into the oil and tamari paste. Sprinkle half a teaspoon of orange zest in it and mix thoroughly. This will be used in four parts.
Layering the Stuffing
Bring out the tofu from the refrigerator and remove the weight and top cloth from it. Scoop out most of the tofu next in a separate bowl and leave a 1 inch layer in the colander. Brush this with 2 teaspoons of the miso seasoning and scoop the entire stuffing into the center of this tofu layer.
Press the remaining tofu on top of this stuffed layer and press down firmly. Holding the four corners of the cheesecloth, remove the entire shell of tofu from the colander and place it on a clean surface.
Place the greased side of the baking sheet on top of the tofu and invert the tofu cake onto the baking sheet. Shape it into an oval cake with your hands very gently. Next use 2 spoons of the miso paste to brush the top of the tofu cake and put a few rosemary sprigs on top of it. Cover the tofu turkey with foil.
Baking the Tofu Turkey
Bake it for one hour in a pre-heated oven at 400°F. Remove the foil after one hour and baste the turkey with some more miso paste and retain 4 tablespoons of the sauce.
Return the turkey tofu to the oven and bake for one more hour till the top is golden brown. When it is ready, remove it on a serving platter with a spatula. Brush the top with the remaining miso paste mixture and serve immediately.
