Generally the recipes for Turkey loaf do not yield succulent and tasty meatloaf but if you utilize different vegetables for the stuffing right in the center, you will be pleasantly surprised.
Gourmet Turkey Loaf
Start with a slightly beaten egg and mix in half a cup of fine and unsalted bread crumbs. Chop half cup of onions very finely and add it into the egg along with 1/4 cup of milk. Season with half a teaspoon of crushed dried thyme along with 1/4 teaspoon of dried rosemary.
Add flavor with freshly ground black pepper and 1/4 teaspoon of garlic salt and combine this mixture with the 1 1/2 pounds of raw turkey meat which has been finely ground.
Shape the mixture into a 12 x 8″ rectangle loaf on top of a wax paper and set aside. Heat some water in a separate pan and steam two thirds of a cup of shredded carrots, 1 cup of chopped broccoli, and 1/3 cup of red bell peppers that have been chopped. Steam for approximately 4 minutes until the vegetables are crisp but tender. Grate 2 tablespoons of Parmesan cheese and stir it into the vegetable mixture for a smooth and cheesy concoction.
To Assemble The Turkey Loaf
Spread the vegetables on top of the turkey mixture all the way out to the sides leaving a 1 inch space on each side. Starting from the shorter side, roll the turkey mince into a tight Swiss roll by using the wax paper to help you handle the turkey meat. Continue pulling away the wax paper as you roll the meat into a log.
Place the loaf into a 9 x 5 x 3″ baking pan. Bake the turkey loaf for a one-hour and 15 minutes or until the meat loses its pink color. Remove from the oven and brush it with 2 tablespoons of sweet and tangy currant jelly that has been melted for easier application. This will give the turkey loaf a nice glossy color and adds some sweetness.

Another easy recipe for turkey loaf requires simpler ingredients and is easier to make when you are running short of time. Beat one egg and add in one finely chopped onion along with 1/2 cup of bread crumbs into the mixture and combine well.
You can adjust the quantity of breadcrumbs as required to create a stiff mixture. Season this with freshly ground black pepper and salt to taste. Preheat your oven to 175°C. Add the mixture into a 9 x 5 x 3″ baking pan and sprinkle it evenly with 1 tablespoon of poultry seasoning.
You will need to bake the meatloaf for approximately one and a half hours in the preheated oven. Make sure you insert a meat thermometer to check that the meat temperature is 170°C. This is to ensure that the meat is cooked through. You can also use a package of ready-made stuffing and put this in the center of the loaf and roll it like a jelly roll before baking.
