Meaty Turkey Tortilla Roll Ups

Using 24 tortillas spread approximately 16 ounces of cream cheese between them. Using one and 1/2 pounds of turkey and pepperoni slices layer the meat in alternate slices on each of the tortillas. Divide and sprinkle 5 -6 chopped tomatoes, 2 chopped onions and a few chopped avocados on top. Approximately 5 or 6 of each should be more than enough and you’ll require around two white onions.

Drizzle hot sauce for turkey tortilla roll ups on top. This is readily available at any market. The best way to start is to add ingredients from left to right and cover the top portion facing you with all the ingredients. These have to be rolled up like burritos and should not be overstuffed.

Once you have filled them completely start rolling them and press down gently. Then back them up and start rolling again while you continue the roll all the way across.
Next put them in a glass Pyrex dish and refrigerate for five hours or more. Once they are thoroughly chilled slice them into rolls and stick round toothpicks in each slice. To prepare turkey tortilla roll ups you will need 10 tortillas. Prepare a sauce for the turkey tortilla roll ups. Combine one packet of taco mix with 40 ounces of hot ready-made enchilada sauce and one small can of tomato paste and half a cup of water. Season the sauce with salt and red chili powder to taste and add 2 teaspoons of sugar. Keep this warm on the stove and dip each of the tortillas in a little sauce.

Sprinkle 2 1/2 pounds of ground turkey meat on top of the tortillas and roll them up. Use a 9 x 12 x 2″ Pyrex dish. Line it with the turkey tortilla roll ups and stuff them close together. Pour 30 ounces of spicy enchilada sauce on top and sprinkle on some grated Monterey Jack cheese as well as sharp cheddar cheese which should amount to around 1 cup of each. Bake in a hot oven at 350°F for 30 minutes.

Turkey Colby Tortilla Roll Ups

Brush both sides of tortillas with water and put them on a plastic wrap sheet. Mix half a cup of mayo based ready-made salad dressing with 2 teaspoons of honey mustard and spread it on one side of the tortillas.

Sprinkle some roast turkey and roast beef shavings on top of them. Place slices of Swiss cheese or Colby on top and sprinkle green olives with pimento on top.
Next sprinkle grated carrots and alfalfa sprouts on top and season with a little salt and pepper. Sprinkle on torn spinach leaves and lettuce leaves for a crunchy texture. Roll it to the last half-inch and wrap firmly in a plastic wrap sheet. Place it in the refrigerator for four hours or overnight and then remove the plastic wrap and slice it in half before serving.
