Irish Apple Jelly

It sounds simple but this well flavored jelly is one of the trade mark recipes of Ireland. It is usually eaten with buttered scones and must be prepared at a slow and steady pace. You will need apples, cloves, water and sugar to end up with this easy to make authentic Irish apple jelly.

Wash the apples and cut them into quarters. You do not need to peel them nor do you have to remove their core. Place them in an ovenproof dish with water. You can cover the dish with aluminum foil if necessary. The contents need to be cooked over night in the oven at low heat.

The next day you will strain the contents using a jelly bag but you must resist the temptation to squeeze the pulp. Every cup full of the liquid needs to be complimented with exactly that much sugar. Now you will heat the mixture so that the sugar dissolves. You need to be careful not to over boil the liquid as this could ruin the jelly. Pour into warm jars and cover them with wax lids to let the traditional apple jelly set.

Boxty

This is a unique potato based dish with a unique name. This is one of the most celebrated traditional dishes of Ireland. You will need some raw potato, mashed potato, plain flour, baking powder, butter, milk and salt for this recipe.

Start off by grating the raw potatoes in a pan. Turn it out onto a cloth and catch the liquid. You should be left with a clear fluid with starch. Mix the starch with the grated and mashed potatoes. Next up you need to sieve all the dry ingredients and mix them with the melted butter. Add milk to make pliable dough and knead it on a floured surface. Cut quarters and bake in a heavy pan to ready your boxty.

Gooseberry Crumble

Easy and economical to prepare the Gooseberry Crumble is a truly delicious treat from the Irish culture. You can use the same recipe with other flavors such as apple or blackberry.

You will need self raising flour, soft brown sugar, gooseberries, caster sugar and butter for this recipe. You will need to use your fingertips to rub the butter into the flour. Add the brown sugar when the mixture starts to look like breadcrumbs. Remove the top and tail of the berries and dip them in the crumble mixture while lightly pressing them down. All you have to do is bake them for about 45 minutes and your gooseberry delight is ready to be served with fresh cream.
