In order to prepare a nutritious turkey rice casserole you will need a large saucepan to boil 4 cups of chicken broth in it. Put 1/4 cup of wild rice into the chicken broth and simmer it with a cover for 25 minutes. Now add 1 and 3/4 cup of long grain rice and simmer it for 25 minutes or more till it becomes very tender.
Use a large pan to sauté 2 cups of freshly sliced mushrooms, half a cup of fresh broccoli florets, one chopped onion, 1/4 cup of carrots which has been chopped as well and 1/4 cup of celery which has been sliced, add in two tablespoons of extra-virgin olive oil.

Make sure they are tender crisp before you add in 5 cups of pre-cooked turkey cubes. Now season this with 2 ounces of diced pimentos, 1 teaspoon of salt, half a teaspoon of dried marjoram and half a teaspoon of crushed and dried oregano. Mix the rice into the skillet.
How to Prepare Cheesy White Sauce
Take a large saucepan to prepare white sauce. Add 5 tablespoons of flour and combine it with 3 cups of milk and 1/4 cup of chicken broth. Keep mixing it till it forms a smooth paste and comes to boil. Stir it for a further two minutes or until it is thick. Add 1 cup of shredded cheddar cheese along with 1 cup of Swiss cheese which has been shredded and melt these in the White sauce. Now add this to the turkey and rice mixture.
Grease a 13 x 9 x 2″ baking dish and transfer the rice and turkey mixture into this casserole dish. Sprinkle 1 cup of shredded Swiss cheese and 1 cup of cheddar cheese which has been shredded evenly on top of the casserole. Heat the oven to 350°F and bake the casserole for 30 minutes or till it is heated through and the cheeses have melted into a bubbly topping.
Asian Flavored Turkey Rice Casserole
For a variation on the turkey rice casserole you can combine cream of celery or cream of mushroom soup to give it an Asian flavor. Cook 2 cups of long grain rice in 4 cups of chicken broth. Mix 2 cups of chopped and cooked smoked turkey breast into the rice.
Chop up 1/4 cup of green pepper and half a cup of onions and combine into the turkey breast and rice. Now put in 4 ounces of sliced mushrooms and pour in 4 ounces of thick cream of mushroom soup. Season it with garlic powder approximately 1/4 teaspoon and salt and freshly ground pepper to taste.
Now using a 19 x 13 x 2″ casserole dish put all the ingredients inside and bake for 30 to 40 minutes at 350° F or till the dish is bubbly and smooth.
