The Irish potato is a unique edible tuber that is derived from the Solanum tuberosum plant. Potato and Leek Bake
This interesting recipe makes use of leeks with potatoes. You will need butter, sliced leeks, minced garlic, peeled baking potatoes, some heavy cream, milk, eggs, salt, pepper, old dense white bread and parmesan cheese in order to prepare this Irish potato dish.
You will start off with preheating your oven to 375 degrees. Grease a shallow baking cup with some butter and set aside. Then take two tablespoons of butter and melt in a skillet placed over medium heat. Add the sliced leeks and garlic to the pot and cook for about 10 minutes until you find the leeks to be softened. Once the leeks reach the desired state set it aside.
Next up you need to cut the potatoes crosswise into small slices. Set up half of these slices in the baking tray and top them off with half of the prepared leek mixture and repeat the layers. On the side whisk the milk, cream, eggs, salt and pepper in a bowl to make a nice consistent paste and then pour it over the contents of the baking tray.
Parallel to this you will make bread crumbs by cutting the bread into slices measuring one inch each. Then place it in the food processor which will turn it into fine crumbs. Then you will mix them in a separate bowl with parmesan cheese and add some melted butter to it as well. When this mixture is prepared you will layer the contents of the baking tray with it and set it into the oven. When you see your potatoes turning golden brown in color and they become soft and tender then know that your Irish potato dish is ready to serve.
Roasted Mustard Potatoes
You will need the tasty Lakeshore Strong Irish Mustard along with olive oil, Irish potatoes, medium onions and chopped parsley for this interesting Irish potato recipe.
You will start off by scrubbing the potatoes while leaving their skin on and cut them into small cubes. On the side combine the mustard with the oil. Then combine the potatoes with the mustard mixture and add the onions in a large bowl. Once the contents are nicely coated spread them on a baking sheet and insert them in an oven preheated at 400F. It will take the potatoes almost up to an hour to become crispy and tender as desired. Once ready you can use the chopped parsley to garnish the roasted mustard potatoes.
