Algerian desserts are among the most delicious in the world. Many use exotic dried fruits like dates and figs, although some contain apricots. Finding recipes for Algerian deserts is not difficult and most are fairly simple to prepare. The influence of both French and North African cuisines combine in these dishes to create marvelous flavors that are unique to Algeria.
Chalda Fakya
This is a fresh fruit salad which is a common desert in Algeria. Recipes vary in the fruits they use, but this one is delicious and easy to prepare.
• ¼ melon cubed
• 2 bananas sliced
• 5 oranges peeled seed and chopped with the membranes removed
• 4 apricots peeled and cubed
• ¾ cup orange juice
• ¼ cup lemon juice
• 1-1/2 tbsp sugar
• 1 tsp vanilla
• ½ tsp cinnamon
• whipped cream (optional)
Mix all the ingredients except the whipped cream and chill. Serve with whipped cream if desired. Other fruits may be added or substituted if these are unavailable.
Couscous and Lavender
It doesn’t get easier than this traditional desert which is served hot.
• 8 oz. box couscous
• 1 tbsp of lavender flowers
• powdered sugar
Steam the couscous according to package directions. Mix in the lavender flowers and dust the top with powdered sugar. Serve hot either buffet style or in individual bowls.
Makroud el Louse
These simple to make treats are Algerian Almond cookies and are great with coffee or tea.
• 1 ¼ pound of blanched almonds
• 1 cup sugar
• 2 cups water
• 2 eggs lightly beaten
• ¼ tsp orange extract
• powdered sugar
Preheat oven to 350 degrees. Process sugar and almonds in a food processor until the mixture resembles coarse flour. Add the eggs and mix until dough forms, then knead the dough until it is smooth. Divide the dough into 4 sections and twist the first section into a rope. Roll dough flat and cut on a diagonal to form diamonds. Repeat with each portion of dough. Bake for about 15 minutes until the cookies are a light golden brown.
Boil the water, orange extract and ½ cup sugar until a syrup forms. Dip each cookie in the syrup and then the powdered sugar. Place on a rack to dry.
These recipes are simple, yet delicious and the fruit salad is even healthy. The desserts compliment the often spicy flavor of Algerian cooking and are the perfect end to a meal. They are so simple even a novice cook should be able to prepare them without any difficulties.
