The soft cookies with a melt in your mouth flavor will become a family favorite. You will require 1 1/2 cups of all purpose flour and 1 cup of shortening along with 3/4 cups of white sugar and 3/4 cups of almonds. For the seasoning you will require half a teaspoon of grounded cinnamon and half a cup of powdered sugar, which is optional.
To prepare the flour place it on a cookie sheet in a preheated oven at 350° F and keep moving it with a spoon to toast it evenly. Let it rest in the oven for up to eight minutes and then set it aside.

Toast the raw almonds by placing them on another cookie sheet and roast as they change color slightly. Cool the almonds and then grind them finely in a food processor.
In a large bowl mix the flour and shortening with the sugar and cinnamon powder in it. Now add the powdered almonds and mix this into firm dough. Place a sheet of wax paper on the countertop and put the dough on it. Flatten it to half an inch thickness and just cut out small cookies with a cookie cutter.

Lift these off the waxed paper with a spatula and place them on a cookie sheet for baking. Heat the oven at 400° F and bake the cookies for half an hour. Remove and allow them to cool before you sprinkle powdered sugar on top.

Spanish Cookie Recipe with Peanuts

For a peanut-based Spanish cookie recipe you require 1 1/2 cups of flour, 1 cup of firmly packed brown sugar, softened unsalted butter about 1 cup, 1 1/2 teaspoons of baking powder as well as 1 teaspoon of baking soda.

For a dense cookie dough with fiber you will need one cup of rolled oats and one cup of salted peanuts. For extra flavor you will need one cup of coconut flakes and half a cup of melted chocolate along with one egg.

To prepare the Spanish cookie recipe with peanuts start mixing the flour with the baking powder and baking soda to combine evenly. In another bowl combine sugar with a beaten egg and make a uniform paste. Beat in this paste with the flour mixture. Next put the rolled oats, peanuts as well as coconut flakes into the dough and keep mixing it before you add the next ingredient. Drop the mixture onto the cookie sheet with a rounded spoon and shape it as you like.

Bake for 15 minutes at 350° F and then allow the cookies to cool before you pipe out the melted chocolate in different designs on the cookies. Sprinkle peanuts on top to garnish.
