Recipe:

Serves: 6 to 8

Total time: 40 mins

Prep Time: 30 minutes to 12 hours soaking time

Ingredients:

1 (1 pound) French (sweet not sourdough) baguette

1 1/2 cups silvered and sliced almonds

4 eggs

2 egg whites

2 tablespoons butter

5 tablespoons sugar

1 teaspoon vanilla extract

1 3/4 cups almond milk

1/2 teaspoon salt

1/2 teaspoon almond extract

Maple syrup

Instructions

Begin by trimming the ends of your French bread, cut the rest of the bread into thick one-inch slices. You should ideally have between 14 to 16 slices which need to be arranged in one layer in a baking dish (13 x 9inch).

Next, whisk the almond milk, egg whites, eggs, extracts, sugar and salt together. Pour the mixture over the bread and allow it to soak for at least 30 mins and up to 12 hours. The bread should now be moist by absorbing most of the custard. Cover and leave in refrigerator if soaking for more than an hour.

When the bread is ready, leave the toast at room temperature while the oven heats up to 400°F. Also, spread butter on a baking sheet.

Now, gather your almonds in a shallow dish to coat them onto one side of the toast. Take a piece of the French toast, hold for two seconds to allow the excess liquid to drip off. Then place the slice in the almond dish, press gently to allow the almonds to stick. Place the slices with the almond side up on the baking sheet. Repeat the step for the remaining slices.

Additionally, sprinkle the remaining sugar on the French toasts. Bake the bread for 20 to 25 minutes until the base is golden, or until slightly puffy.

And you’re done! Your French toast almond milk extract is ready to be served with some maple syrup on the side.
