French Toast Bagels

You can prepare fifteen French toast bagels in three hours.


  • 2 1/4 cups warm water
  • 1 kg active dry yeast
  • 1/4 cup sugar
  • 6 cups bread flour
  • 1 Tbsp salt
  • 3 Tbsp cinnamon
  • 1 Tbsp vegetable oil, a little for greasing
  • 2 Tbsp vanilla
  • 1 Tbsp maple extract
  • 1 egg yolk
  •  poppy seeds/other toppings


Step 1: Mix together water, yeast and one tbsp sugar in a bowl and let it set for 10 minutes until foamy.

Step 2: Mix together flour, salt, one tbsp sugar and cinnamon in a stand mixer. Using the dry ingredients, make a well. Then add the yeast mixture, vanilla and maple extract and oil. Mix the entire substance, knead using a mixer or by hand for ten minutes.

Note that the dough will be stiff, yet should become elastic and smooth. Bring the dough in the shape of a ball, place and turn once in an oiled bowl to coat all round. Next, place a plastic cover over the bowl and allow it to rise for an hour.

Step 3: Now is the time to give shape to your bagels. Punch the dough, turning it out on the floured surface and knead for few minutes. Keep the dough balls covered throughout your preparation time.

Now you need to form balls, pushing your thumb across the center. Split into three and then divide each into five pieces. You should aim to make a ring which is 3 to 4 inches in diameter.

Step 4: Place the bagels on oiled sheets, cover with a towel and allow it to rise for thirty minutes.  Set the oven temperature to 500F. Next, take a large pan around 5 inches deep and boil water, adding 2tbsp of sugar.

As the water boils, the bagels have puffed a bit which is when you need to start poaching. Place bagels in the pan and boil each side for one minute. Place them again on your oiled sheets.

Mix egg yolk with 1tbsp of water and brush this on the bagels. Choose and sprinkle your topping. Poached and top all the bagels, then bake for 10 to 15 minutes until they are golden brown.Your French toast bagels are now ready!
