Start by heating the olive oil in a frying pan and put the lamb chops inside the hot oil. Cook them on both sides until they are golden brown and no longer raw. Remove them by placing them in a casserole dish.
Now fry the onion in the same frying pan with the remaining oil and then add crushed garlic cloves. Fry for a few minutes to allow the flavors to release and vegetables to become soft. Now pour in the tomatoes and season with salt.
Cook for five minutes till the tomatoes are no longer raw and then pour the hot tomato sauce into the lamb chop mixture inside the casserole dish.
Cover it and place it in a pre-heated oven at one 180° C and bake the Spanish lamb chops for 30 minutes or until meat is tender. Serve warm with a mixture of olive oil and balsamic vinegar and fresh warm bread.

The herbs required for this grilled baby Spanish lamb chops recipe are 2 teaspoons of chopped lavender buds from dried flowers and 2 teaspoons of fresh rosemary which has been minced finely. Season it with freshly ground black pepper and coarse sea salt.
