French toast
French toast is a breakfast dish made by soaking sliced bread in a mixture of beaten egg and milk, then frying it in butter on a griddle. Articles cover the older European versions known as pain perdu, the difference between a brioche slice and a sourdough slice for soaking, the ratio of egg to milk for a custard set, common toppings of maple syrup, fruit compote and powdered sugar, and savoury versions with cheese and ham. There are also notes on baked sheet-pan French toast for a crowd and on the question of whether stale bread really works better.
